A no-bake, creamy pumpkin pie with a spicy gingersnap crust and a hint of bourbon. This easy dessert requires minimal effort and sets in the fridge, making it perfect for holidays or last-minute cravings.

  • For the Gingersnap Crust:
  • 20–25 gingersnap cookies (about 2 cups crumbs)
  • 1/2 cup (113g) unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon salt
  • For the Creamy Bourbon Filling:
  • 15 oz (425g) canned pumpkin puree
  • 2 cups (480ml) heavy cream
  • 1 cup (240g) full-fat sour cream
  • 3/4 cup (150g) granulated sugar
  • 1 teaspoon espresso powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup (60ml) bourbon whiskey
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). In a food processor, pulse gingersnap cookies, sugar, and salt until fine crumbs form.
  2. Add melted butter to the crumbs and pulse until the mixture resembles wet sand.
  3. Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish. Bake for 8-10 minutes until fragrant. Let cool completely.
  4. In a large cold bowl, whip heavy cream with an electric mixer on medium-high speed until soft peaks form. Set aside.
  5. In a separate bowl, whisk together pumpkin puree, sour cream, sugar, espresso powder, cinnamon, ginger, nutmeg, vanilla, and bourbon until smooth.
  6. Gently fold the whipped cream into the pumpkin mixture in three additions using a rubber spatula, stopping when no white streaks remain.
  7. Pour the filling into the cooled crust and smooth the top.
  8. Cover loosely with plastic wrap and refrigerate for at least 4 hours, preferably overnight, until set.

Notes

Ensure your bowl and beaters are cold for whipping the cream. Do not overmix when folding to preserve air. The pie is best made a day ahead to allow flavors to meld. It keeps in the fridge for up to 3 days. Do not freeze as the texture may become grainy.
