  • 1/4 cup (60ml) whole milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375ยฐF (190ยฐC). Place your 6-inch cast iron skillet or small baking dish in the oven while it preheats.
  2. Prepare the peach filling: In a medium bowl, gently toss the drained peach slices with 1 tablespoon of sugar, 1 teaspoon of lemon juice, 1/2 teaspoon of vanilla extract, 1/4 teaspoon of cinnamon, and 1 teaspoon of cornstarch. Stir until the peaches are evenly coated and the cornstarch has dissolved. Set aside.
  3. Make the cobbler topping: In a small bowl, whisk together the 1/4 cup of flour, 1/4 cup of sugar, 1/2 teaspoon of baking powder, and 1/8 teaspoon of salt.
  4. Cut in the cold butter: Add the small cubes of cold butter to the flour mixture. Using a pastry cutter or a fork, cut the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized butter pieces still visible.
  5. Add the milk and vanilla: Pour the 1/4 cup of milk and 1/2 teaspoon of vanilla extract into the flour-butter mixture. Stir gently with a rubber spatula just until combined. The batter will be thick and a little lumpy. Do not overmix.
  6. Assemble the cobbler: Carefully remove the hot skillet or dish from the oven using oven mitts. Spoon the peach filling evenly into the bottom of the hot skillet.
  7. Add the topping: Drop spoonfuls of the batter over the peach mixture. It won’t cover the fruit completelyโ€”that’s the goal.
  8. Bake: Place the skillet back in the oven and bake for 20-25 minutes, or until the topping is golden brown and a toothpick inserted into the center of the topping comes out clean. The peach filling should be bubbly and thick around the edges.
  9. Cool slightly and serve: Let the cobbler cool on a wire rack for at least 10-15 minutes. Serve warm, preferably with a scoop of vanilla ice cream or a dollop of whipped cream.

Notes

For the best texture, make sure your butter is very cold. Don’t overmix the batterโ€”a few lumps are fine. Heating the skillet before adding the filling creates a beautifully caramelized bottom layer. If the top is getting too dark during baking, tent it loosely with foil for the last 5 minutes.
