  • 1 large yellow onion, diced (about 1 ยฝ cups)
  • 3 medium carrots, peeled and diced
  • 3 celery stalks, diced
  • 3 cloves garlic, minced
  • 8 cups low-sodium chicken or turkey broth
  • 1 cup wild rice, rinsed
  • 3 cups cooked turkey, shredded or diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • 1 teaspoon salt, plus more to taste
  • ยฝ teaspoon black pepper
  • 1 cup heavy cream
  • 2 tablespoons all-purpose flour
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Sautรฉ the vegetables (10 minutes): Melt the butter in a large skillet over medium heat. Add the diced onion, carrots, and celery. Cook, stirring occasionally, until the vegetables have softened and the onion is translucent, about 5 to 7 minutes. Add the minced garlic and cook for another minute until fragrant.
  2. Transfer to the slow cooker: Scrape the sautรฉed vegetables into your slow cooker. Add the chicken broth, rinsed wild rice, shredded turkey, dried thyme, dried rosemary, bay leaves, salt, and pepper. Give everything a good stir to combine.
  3. Cook on low (6 to 7 hours) or high (3 to 4 hours): Cover and cook until the wild rice is tender but still has a slight chew. The grains should have burst open a little, revealing the lighter interior. Start checking at the 6-hour mark on low or the 3-hour mark on high.
  4. Prepare the cream mixture (5 minutes): About 20 minutes before serving, whisk the flour into the heavy cream in a small bowl until smooth.
  5. Finish the soup: Remove the bay leaves from the slow cooker and discard them. Slowly pour the cream mixture into the soup while stirring gently. Let the soup cook for another 15 to 20 minutes on low, until it has thickened slightly and the flavors have melded together.
  6. Taste and adjust: Taste the soup and add more salt and pepper if needed. I usually end up adding an extra ยฝ teaspoon of salt at this point.
  7. Serve and garnish: Ladle the soup into bowls and top with a sprinkle of fresh parsley.

Notes

For best results, use 100% wild rice, not a blend. Sautรฉing the vegetables first concentrates their flavor. Temper the cream by whisking with flour to prevent curdling. The soup thickens as it sits; add extra broth when reheating if needed.
