A creamy, comforting slow cooker soup with tender chicken, perfectly chewy wild rice, and a rich broth that’s easy to make and perfect for busy weeknights.

  • 1.5 pounds boneless, skinless chicken breasts or thighs
  • 1 cup uncooked wild rice
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 large carrots, peeled and diced (about 1.5 cups)
  • 3 celery stalks, diced (about 1 cup)
  • 4 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and black pepper to taste
  • 1 cup whole milk
  • 1/4 cup all-purpose flour
  • 2 tablespoons unsalted butter
  • Fresh parsley, chopped (optional garnish)
  • Crumbled bacon (optional garnish)
  • Shredded Parmesan cheese (optional garnish)

Instructions

  1. Prep the vegetables: Dice the onion, carrots, and celery into small, even pieces (about 1/4-inch cubes). Mince the garlic.
  2. Layer the ingredients in the slow cooker: Place the chicken in the bottom. Top with the diced onion, carrots, celery, and minced garlic. Sprinkle the wild rice evenly over the vegetables. Pour the chicken broth over everything, making sure the rice is fully submerged. Add the dried thyme, rosemary, bay leaf, and a generous pinch of salt and pepper.
  3. Cook on low for 6-7 hours or on high for 3-4 hours, until the rice is tender and the chicken is cooked through.
  4. Shred the chicken: Remove the chicken from the slow cooker using tongs. Shred with two forks. Discard the bay leaf.
  5. Make the creamy slurry: In a small bowl, whisk together the whole milk and all-purpose flour until smooth.
  6. Finish the soup: Return the shredded chicken to the slow cooker. Pour the milk and flour slurry over the top and stir gently. Add the butter and let it melt. Cover and cook on high for another 15-20 minutes, until the soup has thickened.
  7. Taste and adjust: Season with additional salt and pepper as needed. If the soup is too thick, stir in a splash of chicken broth or milk. If too thin, let it cook uncovered for another 10 minutes.
  8. Serve and garnish: Ladle into bowls and top with fresh parsley, crumbled bacon, or shredded Parmesan cheese. Serve immediately.

Notes

The soup will continue to thicken as it sits. If making ahead, add extra broth when reheating. For best flavor, make a day ahead. Freezes well for up to 3 months.
