This cozy slow cooker beef and vegetable soup is a forgiving, delicious meal that tastes like it took hours of effort but actually lets you binge-watch a show or get some work done. The beef gets melt-in-your-mouth tender, and the broth becomes rich and deeply savory.

  • 2 lbs (900g) beef chuck roast, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 45 garlic cloves, minced
  • 3 large carrots, peeled and sliced into rounds
  • 3 celery stalks, sliced
  • 2 medium Russet potatoes, peeled and cut into 1-inch cubes
  • 4 cups (960ml) low-sodium beef broth
  • 14.5 oz (400g) canned diced tomatoes, undrained
  • 2 tablespoons tomato paste
  • 1 cup (150g) frozen peas
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 2 bay leaves
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Pat the beef cubes dry with paper towels and season generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Working in batches, sear the beef cubes for 2-3 minutes per side until nicely browned. Transfer to the slow cooker.
  3. In the same skillet, reduce heat to medium and add diced onion. Cook for 3-4 minutes until softened, scraping up browned bits. Add minced garlic and cook for 30 seconds until fragrant. Transfer to the slow cooker.
  4. Add carrots, celery, potatoes, diced tomatoes (with juices), tomato paste, beef broth, thyme, rosemary, and bay leaves to the slow cooker. Stir to combine.
  5. Cover and cook on LOW for 7-8 hours or on HIGH for 4-5 hours, until beef is fork-tender and potatoes are soft.
  6. About 15 minutes before serving, stir in frozen peas and let them heat through.
  7. Remove bay leaves. Taste and adjust salt and pepper as needed. Ladle into bowls and garnish with fresh parsley if desired.

Notes

Don’t skip searing the beef for best flavor. Layer root vegetables at the bottom of the slow cooker. Avoid lifting the lid during cooking. For a thicker soup, mix 2 tablespoons cornstarch with 2 tablespoons cold water and stir in 30 minutes before serving. The soup tastes even better the next day.
