  • 1 cup old-fashioned rolled oats (not quick oats)
  • ¾ cup all-purpose flour
  • ½ cup packed brown sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup unsalted butter, cold and cut into small cubes

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Make the salted caramel sauce: In a medium saucepan over medium heat, melt ½ cup butter. Add brown sugar and whisk until combined. Let bubble gently for 2 minutes, stirring constantly. Slowly pour in heavy cream while whisking (it will bubble up). Continue whisking for 2 minutes until smooth and thickened. Remove from heat and stir in vanilla and flaky sea salt. Set aside to cool slightly.
  3. Prepare the apple filling: In a large mixing bowl, combine sliced apples, granulated sugar, flour, cinnamon, nutmeg, and lemon juice. Toss until apples are evenly coated. Let sit for 5 minutes.
  4. Make the oat crumble: In a medium bowl, whisk together oats, flour, brown sugar, cinnamon, and salt. Add cold butter cubes. Use a pastry cutter or fingertips to work butter into dry mixture until it resembles coarse crumbs with some pea-sized butter pieces. Do not overwork.
  5. Assemble the crisp: Spread apple mixture evenly in prepared baking dish. Drizzle about ⅔ of the salted caramel sauce over the apples. Sprinkle oat crumble evenly over the top; do not press down.
  6. Place dish on a baking sheet. Bake for 35-40 minutes, until topping is golden brown and filling is bubbling around the edges. If topping browns too fast, tent loosely with foil for last 10 minutes. Let cool on a wire rack for at least 15 minutes before serving.
  7. Warm reserved caramel sauce slightly in microwave (about 15 seconds). Drizzle over each serving and add a final pinch of flaky sea salt.

For gluten-free, use a 1:1 gluten-free flour blend and certified gluten-free oats. For dairy-free, use vegan butter sticks and coconut cream. Cold butter is essential for a crispy crumble.
