  • 1 cup (240 ml) heavy cream, divided
  • 1 ½ cups (270 g) white chocolate chips
  • 1 teaspoon (5 ml) peppermint extract
  • ½ teaspoon (2.5 ml) vanilla extract
  • 2 tablespoons (25 g) granulated sugar
  • 1 pinch salt
  • 23 candy canes, crushed
  • 1 tablespoon (8 g) powdered sugar

Instructions

  1. Pour 4 cups of whole milk and ½ cup of heavy cream into a medium saucepan. Place over medium heat until warm with tiny bubbles around the edges, about 4-5 minutes. Do not boil.
  2. Add 1 ½ cups of white chocolate chips to the warm milk mixture. Whisk gently but constantly until completely smooth and pale creamy color, about 3 minutes.
  3. Remove saucepan from heat. Add 1 teaspoon peppermint extract, ½ teaspoon vanilla extract, 2 tablespoons granulated sugar, and a pinch of salt. Whisk until fully incorporated. Taste and adjust if desired.
  4. Pour remaining ½ cup heavy cream into a chilled mixing bowl. Add 1 tablespoon powdered sugar and ¼ teaspoon vanilla extract. Whip with a hand mixer on medium speed until soft peaks form, about 2-3 minutes.
  5. Place 2-3 candy canes in a zip-top bag and crush with a rolling pin into a mix of fine dust and small chunks.
  6. Optional: Warm mugs by pouring hot water into them, letting sit for a minute, then dumping out.
  7. Ladle hot chocolate into warmed mugs, filling about three-quarters full. Top with a generous dollop of whipped cream and sprinkle crushed candy cane pieces on top. Serve immediately.

Notes

Don’t boil the milk to avoid scalding. Use good-quality white chocolate chips with cocoa butter as first ingredient. Peppermint extract is potent; start with 1 teaspoon and adjust to taste. For dairy-free, use oat milk and full-fat coconut cream. Leftover hot chocolate can be refrigerated for up to 3 days; reheat gently on the stove.
