Instructions

  2. Mix the Dry Ingredients: In a large bowl, combine 1 1/2 cups all-purpose flour, 1 cup rolled oats, 1 teaspoon baking soda, and 1/2 teaspoon salt. Stir well.
  3. Mash Bananas and Mix Wet Ingredients: In another bowl, mash 3 medium ripe bananas until slightly chunky. Add 3/4 cup packed light brown sugar, 2 large eggs, 1/2 cup melted unsalted butter, and 1 teaspoon vanilla extract. Whisk until combined.
  4. Combine Wet and Dry: Pour wet mixture into dry ingredients and fold gently with a spatula until just combined. Avoid overmixing.
  5. Add Pecans: Fold in 1/2 cup chopped toasted pecans, reserving some for topping if desired.
