A simple, creamy, and dairy-free pumpkin soup made in a slow cooker with just five core ingredients. This comforting dish is perfect for busy weeknights and delivers rich flavor with minimal effort.

  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 can (15 oz) 100% pure pumpkin puree
  • 1 tsp ground ginger
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 tsp salt (plus more to taste)
  • 1/4 tsp black pepper (plus more to taste)
  • 1 can (13.5 oz) full-fat coconut milk, shaken well
  • 32 oz low-sodium vegetable or chicken broth

Instructions

  1. Heat olive oil in a small skillet over medium heat. Add diced onion and a pinch of salt; cook for 3-4 minutes until translucent. Add minced garlic and cook for 30 seconds until fragrant. Transfer to the slow cooker.
  2. Add pumpkin puree, ginger, cinnamon, nutmeg, salt, and pepper to the slow cooker. Stir until evenly distributed.
  3. Pour in the vegetable or chicken broth and stir well to combine. Scrape down the sides of the pot.
  4. Cover and cook on LOW for 4-6 hours (or HIGH for 3 hours) until onions are disintegrated and flavors are blended.
  5. Stir in the full-fat coconut milk. Taste and adjust seasoning if needed.
  6. For a smoother texture, use an immersion blender to puree the soup directly in the pot, or leave it rustic.
  7. Serve hot, garnished with toasted pumpkin seeds, chili oil, or fresh herbs.

Notes

Ensure you use 100% pure pumpkin puree, not pumpkin pie filling. Sautéing the onions and garlic before adding them to the slow cooker enhances the flavor significantly. If the soup is too thin, simmer uncovered on HIGH for the last 30 minutes to reduce. If too thick, add a splash of broth.
