  • 1 cup diced celery (about 3 stalks)
  • 1 cup diced red bell pepper
  • 1/2 cup diced red onion (soak in cold water for 10 minutes for milder bite)
  • 1/2 cup shredded carrots (optional)
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon Dijon mustard

Instructions

  1. Cook the pasta: Bring a large pot of generously salted water to a rolling boil. Add 1 pound of elbow macaroni and cook according to package directions until al dente, about 7-8 minutes. Stir occasionally to prevent sticking.
  2. Rinse the pasta: Drain the pasta in a colander and immediately rinse it under cold running water until cool to the touch. This stops the cooking process and removes excess starch. Shake the colander well to remove as much water as possible.
  3. Make the dressing: While the pasta cools, whisk together 1 cup mayonnaise, 1/2 cup sour cream, 2 tablespoons apple cider vinegar, 1 tablespoon Dijon mustard, 1 tablespoon sugar, 1 teaspoon salt, 1/2 teaspoon black pepper, 1/2 teaspoon garlic powder, and 1/4 teaspoon paprika in a medium bowl.
