This classic apple crisp with vanilla ice cream is a rustic, forgiving dessert that comes together in under an hour with simple pantry ingredients. Warm cinnamon-spiced apples under a crunchy golden oat topping, served with cold vanilla ice cream—it’s pure comfort in a bowl.

Ingredients

Scale
  • 6 cups apples, peeled, cored, and sliced (about 56 medium apples)
  • 1/3 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt
  • 1 cup old-fashioned rolled oats
  • 3/4 cup all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt
  • 1/2 cup unsalted butter, cold and cut into small cubes
  • Vanilla ice cream for serving
  • Optional: caramel sauce, whipped cream, or a dusting of cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Peel, core, and slice the apples into 1/4-inch thick slices. You should have about 6 cups.
  3. In a large bowl, toss the sliced apples with granulated sugar, lemon juice, flour, cinnamon, nutmeg, and salt. Let sit for 5 minutes.
  4. In a medium bowl, whisk together oats, flour, brown sugar, granulated sugar, cinnamon, and salt. Add cold cubed butter and cut it in using a pastry cutter, two forks, or your fingertips until the mixture resembles coarse crumbs with some pea-sized butter pieces. Squeeze a handful to form a few larger clumps.
  5. Spread the apple mixture evenly in the prepared baking dish. Sprinkle the topping evenly over the apples without pressing down. Place the dish on a baking sheet.
  6. Bake for 40-45 minutes, until the topping is golden brown and the filling is bubbling around the edges. If the topping browns too quickly, tent loosely with foil for the last 10 minutes.
  7. Let the crisp cool on a wire rack for 10-15 minutes to allow the filling to set.
  8. Serve warm in bowls topped with a scoop of vanilla ice cream. Optionally drizzle with caramel sauce or sprinkle with cinnamon.

Notes

For best texture, use a mix of tart and sweet apples like Granny Smith and Honeycrisp. Use cold butter for the topping to ensure crispiness. Let the crisp rest for 10-15 minutes after baking to allow the filling to set. The topping can be doubled for extra crunch. Leftovers can be stored in the refrigerator for up to 4 days and reheated in the oven or microwave.
