  • 2 cloves garlic, minced
  • ¼ cup finely grated onion
  • 1 teaspoon salt
  • ½ teaspoon black pepper, freshly ground
  • 2 tablespoons olive oil
  • Cranberry sauce, for serving
  • Fresh parsley, for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper.
  2. Make the panade: In a large mixing bowl, combine breadcrumbs and milk. Let sit for 5 minutes.
  3. Add egg, grated onion, minced garlic, sage, thyme, salt, and pepper to the panade. Mix with a fork until well combined.
  4. Add ground turkey to the bowl. Gently mix with your hands or a spatula until just combined (about 30 seconds). Do not overmix.
  5. Optional: Do a test fry by cooking a small piece of the mixture in a skillet over medium heat for 2 minutes per side. Adjust seasoning if needed.
  6. Shape the mixture into 1-inch (2.5 cm) meatballs using a 1-tablespoon cookie scoop or your hands. You should get about 24-28 meatballs.
  7. Place meatballs on the prepared baking sheet, spacing about 1 inch apart. Drizzle with olive oil and gently roll to coat.
  8. Bake for 12-14 minutes, until internal temperature reaches 165°F (74°C) and meatballs are golden brown. For extra caramelization, switch to broil for the last 2-3 minutes.
  9. Let meatballs rest on the baking sheet for 2-3 minutes before transferring to a serving platter.
