  • 1 large yellow onion, finely diced
  • 3 stalks celery, finely diced

  • 1 tablespoon fresh thyme, leaves stripped from stems
  • 2 to 3 cups low-sodium chicken broth
  • 3 large eggs, beaten
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional: 1/2 cup chopped sausage or bacon bits

Instructions

  1. Ensure cornbread is completely cool and crumble it into a large mixing bowl into pea-sized crumbs.
  2. In a large skillet over medium heat, melt 1/4 cup of butter. Add diced onions and celery; sauté for 5-7 minutes until softened. Add sage and thyme in the last minute to release oils.
  3. Pour the sautéed vegetable and herb mixture over the crumbled cornbread and toss gently to distribute evenly.
  4. In a separate bowl, whisk together the remaining 1/4 cup melted butter, beaten eggs, and 2 cups of chicken broth.
  5. Pour the wet mixture over the cornbread mixture and gently fold until evenly moistened. Do not overmix.
  6. Let the mixture rest for 15-20 minutes to allow the cornbread to absorb the liquid.
  7. Taste a small piece of the wet mixture and adjust salt and pepper as needed.
  8. Grease a 9×13 baking dish with butter. Pour the dressing into the dish and spread it evenly, pressing down lightly.
  9. Preheat oven to 350°F (175°C). Bake for 30-40 minutes until the top is golden brown and crispy and the center is set.
  10. Let the dressing rest for 10 minutes before serving.
