  • 3 cups shredded Mexican blend cheese
  • 1 cup shredded sharp cheddar cheese
  • 1 cup sour cream
  • 1 cup pico de gallo or fresh salsa
  • 1/2 cup pickled jalapeños
  • 1/2 cup black beans, drained and rinsed (optional)
  • 1/2 cup canned corn, drained (optional)
  • 1/4 cup fresh cilantro, chopped
  • 1 avocado, diced
  • 1 lime, cut into wedges
  • 1/2 cup sliced black olives (optional)
  • 1/4 cup sliced green onions (optional)
  • Hot sauce (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or aluminum foil.
  2. In a mixing bowl, combine 4 cups smoked pulled pork with 1/2 cup barbecue sauce, 1 tablespoon apple cider vinegar, 1 teaspoon smoked paprika, and 1/2 teaspoon garlic powder. Toss until evenly coated. If pork is cold, microwave for 2-3 minutes first.
  3. Spread half the tortilla chips in an even layer on the prepared baking sheet. Sprinkle 1 1/2 cups Mexican blend cheese over the chips, then scatter half the pulled pork mixture on top.
  4. Add the remaining chips on top. Sprinkle the remaining 1 1/2 cups Mexican blend cheese and 1 cup sharp cheddar over the chips. Add the rest of the pulled pork. If using black beans and corn, scatter them over this layer.
  5. Bake for 8-10 minutes, until cheese is melted and bubbly and chips are lightly golden.
  6. Remove from oven. Immediately sprinkle pickled jalapeños over the top. Dollop sour cream in clumps, then add pico de gallo, diced avocado, and chopped cilantro. Squeeze lime wedges over everything.
  7. Serve immediately straight from the baking sheet with extra hot sauce and lime wedges.

Notes

For extra-crispy chips, toast them at 350°F for 5 minutes before adding toppings. Shred your own cheese for best melting. Warm the pork before layering to ensure even heating. Have all toppings prepped before baking.
