This slow cooker ground beef taco meat is incredibly flavorful, never dry, and perfect for taco night. Set it and forget it for a hands-off, deeply seasoned filling that tastes like it’s been cooking all day.

  • 1 medium yellow onion, finely diced (about 1 cup)
  • 4 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano (Mexican oregano preferred)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt (plus more to taste)
  • 1/4 teaspoon black pepper
  • Pinch of cayenne pepper (optional)
  • 1/2 cup low-sodium beef broth
  • 1 (8-ounce) can tomato sauce
  • 1 tablespoon tomato paste
  • 12 tablespoons fresh lime juice (optional)
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

  1. Brown the ground beef: Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a wooden spoon, until no longer pink (8-10 minutes). Drain off excess fat, leaving about 1-2 tablespoons in the pan.
  2. Sauté the aromatics: Add the diced onion to the skillet with the beef and cook for 3-4 minutes until softened. Add the minced garlic and cook for 1 minute until fragrant.
  3. Bloom the spices: Sprinkle the chili powder, cumin, smoked paprika, oregano, garlic powder, onion powder, salt, pepper, and cayenne (if using) over the beef mixture. Stir constantly for about 1 minute.
  4. Add the liquids: Pour in the beef broth, tomato sauce, and tomato paste. Stir until the tomato paste is fully incorporated and the meat is evenly coated.
  5. Transfer to slow cooker: Scrape the mixture into a 4-6 quart slow cooker and spread into an even layer.
  6. Slow cook: Cover and cook on LOW for 4-6 hours or on HIGH for 2-3 hours. If the meat looks dry after 4 hours on low, stir in an additional 1/4 cup of beef broth.
  7. Finish and serve: Just before serving, stir in fresh lime juice and chopped cilantro. Taste and adjust salt and pepper as needed.

Notes

For best flavor, use 80/20 ground beef and do not skip browning the beef. The liquid (beef broth and tomato sauce) is essential for keeping the meat moist. Cooking on LOW for the full 6 hours yields the deepest flavor. Leftovers can be refrigerated for up to 4 days or frozen for up to 3 months.
