A quick and easy homemade pumpkin spice latte made with a simple syrup infused with real pumpkin and warm spices. This recipe is faster than a drive-thru run and uses pantry staples to create a cozy, café-quality drink.

  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 2 tablespoons pumpkin puree (100% pure pumpkin)
  • 1 teaspoon pumpkin pie spice (or 1/2 tsp cinnamon, 1/4 tsp ginger, 1/8 tsp nutmeg, 1/8 tsp cloves)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 1 to 2 shots of espresso (or 1/2 cup strong brewed coffee)
  • 1 cup milk (whole milk, oat milk, or almond milk)
  • Whipped cream, for topping (optional)
  • Extra cinnamon or pumpkin pie spice, for garnish

Instructions

  1. Make the pumpkin spice syrup: In a small saucepan, combine water, brown sugar, granulated sugar, pumpkin puree, and pumpkin pie spice. Whisk over medium heat until combined. Bring to a gentle simmer, then reduce heat to low and cook for 5 minutes, stirring occasionally.
  2. Strain the syrup (optional): Pour through a fine-mesh strainer into a heatproof jar or bowl for a smooth syrup. Stir in vanilla extract and a pinch of salt. Let cool for a few minutes.
  3. Brew your espresso or coffee: While syrup cools, brew 1 to 2 shots of espresso or 1/2 cup strong coffee.
  4. Heat and froth the milk: Heat milk in a small saucepan over medium heat until steaming (about 2-3 minutes). Froth with a milk frother until doubled in volume. Alternatively, shake warm milk in a jar for 30 seconds, then microwave for 30 seconds.
  5. Assemble the latte: Pour 2 to 3 tablespoons of syrup into a mug. Add espresso or coffee and stir. Slowly pour frothed milk over the back of a spoon into the mug. Spoon foam on top.
  6. Garnish and serve: Top with whipped cream (optional) and sprinkle with cinnamon or pumpkin pie spice. Serve immediately.

Notes

Don’t boil the milk—it will scald. Start with 2 tablespoons of syrup and adjust to taste. The syrup can be stored in the fridge for up to 2 weeks. For dairy-free, use oat milk or coconut milk. For an iced version, pour syrup over ice with cold brew and cold milk.
