Ingredients

Scale
  • 1 large bag (1214 ounces) tortilla chips (restaurant-style or scoops)
  • 2 cups cooked pulled pork, warmed
  • ยฝ cup BBQ sauce, plus extra for drizzling
  • 1 ยฝ cups sharp cheddar cheese, freshly shredded
  • 1 cup Monterey Jack cheese, freshly shredded
  • 1 can (15 ounces) black beans, drained and rinsed
  • ยฝ cup pickled jalapeรฑos, drained
  • 2 medium Roma tomatoes, diced
  • 45 stalks green onions, sliced
  • ยผ cup fresh cilantro, chopped (optional)
  • ยฝ cup sour cream, for serving
  • 1 large avocado, diced (or use guacamole)
  • ยฝ cup corn kernels (optional)
  • ยผ cup red onion, finely diced (optional)
  • ยผ cup queso fresco, crumbled (optional)

Instructions

  1. Preheat your oven to 400ยฐF (200ยฐC). Line a large rimmed baking sheet with aluminum foil and spray lightly with nonstick cooking spray or rub with a little oil.
  2. Warm the pulled pork: If cold, add to a small skillet over medium heat with 2 tablespoons BBQ sauce and 1 tablespoon water. Stir occasionally for 3-4 minutes until heated through. If using freshly made pulled pork, toss with BBQ sauce and set aside.
  3. Shred the sharp cheddar and Monterey Jack cheese using the large holes of a box grater. Aim for about 2 ยฝ cups total.
  4. Layer one โ€“ the base: Spread half of the tortilla chips in an even layer on the prepared baking sheet, overlapping slightly.
  5. Add the first layer of toppings: Sprinkle half of the shredded cheese over the chips, then scatter half of the warmed pulled pork, half of the black beans, and half of the pickled jalapeรฑos.
  6. Layer two โ€“ the top: Arrange the remaining tortilla chips over the first layer. Sprinkle the remaining cheese, pulled pork, black beans, and pickled jalapeรฑos on top. Reserve a little cheese for an extra golden finish if desired.
  7. Bake the nachos: Place the baking sheet in the preheated oven and bake for 8-10 minutes, or until the cheese is fully melted and bubbly. Check after 7 minutes to avoid burning.
  8. Add fresh toppings: Remove from the oven. Immediately sprinkle diced tomatoes, sliced green onions, and fresh cilantro over the top. Add diced avocado or dollops of sour cream if using.
  9. Drizzle with extra BBQ sauce: Give the whole thing a final drizzle of about 2 tablespoons BBQ sauce.
  10. Serve immediately: Use a spatula or tongs to transfer portions to plates or serve straight from the baking sheet. Best eaten within 10 minutes.

Notes

For best results, shred your own cheeseโ€”pre-shredded cheese contains anti-caking agents that prevent smooth melting. Use sturdy restaurant-style chips to avoid sogginess. Always add wet toppings like salsa, sour cream, and guacamole after baking. Let nachos rest for 1 minute before serving to allow cheese to set slightly.
