This velvety, deeply spiced apple butter is made entirely in the slow cooker with simple ingredients. It’s perfect for spreading on toast, gifting, or enjoying straight from the jar.

  • 56 pounds apples (about 1214 medium), a mix of sweet and tart varieties like Honeycrisp, Fuji, and Granny Smith
  • 1 ½ cups granulated sugar
  • ½ cup packed light brown sugar
  • 2 tablespoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • ½ teaspoon ground cloves
  • ½ teaspoon ground allspice
  • ¼ teaspoon salt
  • 2 teaspoons vanilla extract
  • 1 tablespoon apple cider vinegar
  • ½ cup water

Instructions

  1. Wash apples, core them, and cut into 1-inch chunks. Do not peel.
  2. Place apples in a 6-quart slow cooker with ½ cup water. Cook on LOW, covered, for 4 hours.
  3. After 4 hours, check that apples are very soft. If not, cook 30-60 minutes more.
  4. Using an immersion blender, puree the apples until smooth. Alternatively, let cool slightly and blend in batches in a regular blender.
  5. Stir in granulated sugar, brown sugar, cinnamon, nutmeg, cloves, allspice, and salt.
  6. Cook on LOW with the lid off or slightly cracked for 3-4 hours, stirring every 30-45 minutes, until thickened.
  7. Test for doneness by spooning a small amount onto a chilled plate. If it holds its shape and doesn’t run, it’s done.
  8. Remove from heat and stir in vanilla extract and apple cider vinegar. Let cool 30 minutes before transferring to jars.

Notes

Do not add sugar at the beginning to prevent scorching. Use the chilled plate test to check for doneness. Stir from the bottom to avoid scorching. For a no-sugar-added version, use very sweet apples and skip the sugars, but expect a looser texture.
