  • 1 tbsp all-purpose flour
  • 1/2 cup whole milk or half-and-half
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • Pinch of cayenne pepper (optional)
  • Salt and black pepper to taste
  • Fresh chives or parsley for garnish (optional)
  • Soft pretzels, pretzel bites, crusty bread, or fresh veggies for serving

Instructions

  1. Shred the cheddar cheese using a box grater and set aside to come to room temperature.
  2. Soften the cream cheese by letting it sit at room temperature for 30 minutes or microwaving in 10-second bursts.
  3. Pour the beer into a measuring cup and let it sit for 5 minutes to lose some carbonation.
  4. In a medium saucepan over medium heat, melt the butter. Whisk in the flour and cook for 1 minute, stirring constantly, until bubbly but not brown.
  5. Slowly pour in the milk while whisking constantly, then slowly pour in the beer, continuing to whisk.
  6. Bring the mixture to a gentle simmer and cook for 2-3 minutes, stirring often, until it thickens slightly and coats the back of a spoon. Reduce heat to low.
  7. Whisk in the Dijon mustard, Worcestershire sauce, garlic powder, smoked paprika, and cayenne (if using).
  8. Add the softened cream cheese in spoonfuls, whisking continuously until completely melted and smooth.
  9. Add the shredded cheddar cheese one handful at a time, stirring constantly after each addition until almost fully melted before adding the next.
  10. Taste and adjust seasoning with salt and black pepper as needed.
