  • 4 oz goat cheese log
  • 4 oz prosciutto, thinly sliced
  • 6 oz Genoa salami
  • 4 oz turkey pepperoni
  • 1 cup candy corn
  • Honey or hot honey for drizzling
  • 3–4 oz dark chocolate squares
  • 1/2 cup dried apricots or figs
  • 2 cups pumpkin-shaped crackers or buttery rounds
  • 1 cup pretzel sticks or twists
  • 1/2 cup roasted and salted almonds
  • 1 cup red and green grapes
  • Fresh rosemary or thyme sprigs
  • 1 apple, thinly sliced (tossed with lemon juice)

Instructions

  1. Take all cheeses out of the refrigerator about 15 minutes before starting. Wash and dry grapes and apple slices. Toss apple slices in lemon juice to prevent browning. Slice aged cheddar into thin triangles or 1-inch cubes. Cut brie into wedges or leave whole. Slice aged gouda into thin wedges. Roll goat cheese log in chopped fresh herbs if desired.
  2. Place cheeses around the board as anchors, spacing them out so there’s at least one cheese in each quadrant. Put brie near center-left, aged cheddar at top right, gouda at bottom left, and goat cheese at bottom right.
  3. Fold prosciutto slices into loose ribbons or drape in waves near brie and goat cheese. Roll salami slices into rosettes and place in small clusters. Stack or fan out turkey pepperoni. Create visual breaks between cheese sections.
  4. Arrange pumpkin-shaped crackers and buttery rounds in small clusters around cheeses, especially near soft cheeses. Stack pretzel sticks in a small pile or star pattern. Scatter roasted almonds in empty spaces to fill gaps without cluttering.
  5. Pour candy corn into a small bowl or arrange in a sweeping curve across the board. Drizzle honey over brie and goat cheese. Place dark chocolate squares near aged cheddar and gouda. Arrange dried apricots and figs in small piles.
  6. Scatter red and green grapes in clusters around the board. Tuck apple slices between cheese wedges and meat folds. Place fresh rosemary or thyme sprigs in strategic spots for color and aroma. Fill any obvious empty spots with extra crackers or nuts.
  7. Serve immediately if within an hour, or cover loosely with plastic wrap and refrigerate for up to 4 hours. Take out 20 minutes before serving to let cheeses come to room temperature. Do not refrigerate candy corn.
