  1. Preheat your oven to 325°F (163°C). Line a baking sheet with parchment paper.
  2. Clean the pumpkin seeds thoroughly by separating them from the pumpkin guts and rinsing under cold water in a colander. Remove any remaining pulp.
  3. Dry the seeds completely by spreading them on a clean kitchen towel or paper towels. Pat dry and let sit for 5 minutes to air dry.
  4. Melt 2 tablespoons of unsalted butter in a small microwave-safe bowl (20-30 seconds) or in a small saucepan over low heat. Let cool for a minute.
  5. In a small bowl, combine 2 tablespoons granulated sugar, 1 teaspoon ground cinnamon, and ¼ teaspoon salt. Stir until evenly mixed.
