These no-bake cheesecake bites feature a creamy strawberry cheesecake filling dipped in a smooth chocolate shell. Perfect for parties, Valentine’s Day, or a quick sweet treat, they come together in about 20 minutes of active work with the freezer doing most of the heavy lifting.

  • 1/4 cup (50g) granulated sugar
  • 1 teaspoon vanilla extract (pure vanilla recommended)
  • 1/4 cup (60ml) heavy cream, cold
  • 1/2 cup (75g) fresh strawberries, finely chopped and patted dry
  • 1 1/2 cups (255g) semi-sweet chocolate chips
  • 1 tablespoon coconut oil or vegetable shortening
  • 2 tablespoons freeze-dried strawberries, crushed into powder (optional garnish)
  • Flaky sea salt, like Maldon (optional garnish)
  • 2 tablespoons white chocolate chips (optional, for drizzle)
  • 1/2 teaspoon coconut oil (optional, for white chocolate drizzle)

Instructions

  1. Make the cheesecake filling: In a medium mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and fluffy, about 2 minutes. Add the sugar and vanilla extract, then beat for another minute until completely combined. Scrape down the sides of the bowl with a spatula.
  2. Add the heavy cream: With the mixer running on low speed, slowly pour in the cold heavy cream. Increase the speed to medium-high and beat for 2-3 minutes until the mixture is thick and holds soft peaks. It should look like a very thick whipped cream cheese, glossy and luscious.
  3. Fold in the strawberries: Using a rubber spatula, gently fold the finely chopped strawberries into the cream cheese mixture. Fold just until distributed, ensuring little pockets of strawberry remain.
  4. Scoop and shape: Using a cookie scoop, portion the mixture into 1-tablespoon balls and place them on a parchment-lined baking sheet. You should get about 20-24 bites. Wet your hands slightly with cold water, then roll each portion into a smooth ball.
  5. Freeze until firm: Place the baking sheet in the freezer for at least 1 hour, or up to 3 hours. The bites need to be completely solid before dipping.
  6. Melt the chocolate: About 10 minutes before you are ready to dip, combine the chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring between each, until completely smooth. Do not overheat.
  7. Dip the frozen bites: Remove the baking sheet from the freezer. Working with one bite at a time, insert a toothpick into the center, then dip it into the melted chocolate, letting any excess drip back into the bowl. Place the dipped bite back on the parchment paper and gently slide the toothpick out. Repeat with all bites.
  8. Add garnishes immediately: While the chocolate is still wet, sprinkle with crushed freeze-dried strawberries or flaky sea salt. If adding a white chocolate drizzle, wait until the dark chocolate has set (about 10 minutes), then drizzle with melted white chocolate using a piping bag or zip-top bag.
  9. Set completely: Return the baking sheet to the refrigerator for at least 30 minutes to allow the chocolate to fully set. The bites should be firm to the touch and the chocolate should snap when you bite into it.

Notes

Temperature is everything: cream cheese must be room temperature. Do not skip the heavy cream step as it keeps the filling creamy. Pat strawberries dry thoroughly to prevent ice crystals. Work in small batches, keeping remaining bites in the freezer. If chocolate gets too thick, microwave for 10 seconds and stir. These are best served cold and can be stored in the refrigerator for up to 5 days or frozen for up to 3 months.
