These easy champagne jello shots are the perfect way to celebrate New Year’s Eve without any stress. They are simple to make, elegant to serve, and absolutely delicious.

  • 1 ½ cups Champagne or Sparkling Wine
  • 1 cup Fruit Juice (white grape, peach nectar, or clear apple juice)
  • 2 packets (about 14g) Unflavored Gelatin
  • ¼ cup Cold Water
  • ¼ cup Sugar
  • Optional: A splash of Vodka or Champagne Liqueur

Instructions

  1. Bloom the Gelatin: Pour the ¼ cup of cold water into a small bowl. Sprinkle the two packets of unflavored gelatin evenly over the surface of the water. Do not stir. Let it sit for about 5 minutes until it becomes a thick, rubbery mass.
  2. Heat the Juice and Sugar: In a small saucepan, combine the 1 cup of fruit juice and the ¼ cup of sugar. Heat over medium-low heat, stirring occasionally, until the sugar is completely dissolved and the mixture is hot but not boiling (small bubbles form around the edges).
  3. Dissolve the Gelatin: Remove the saucepan from the heat. Add the bloomed gelatin to the hot juice mixture. Whisk constantly until the gelatin is completely dissolved and the mixture is smooth and clear (about 1 minute).
  4. Combine with Champagne: Let the juice-gelatin mixture cool for about 2 minutes. Pour the 1 ½ cups of chilled champagne into the saucepan. Whisk gently but thoroughly to combine. If adding vodka or liqueur, add it now.
  5. Fill the Glasses: Pour the mixture into a large liquid measuring cup with a spout. Place your shot glasses on a baking sheet. Carefully pour the liquid into each glass, filling them almost to the top (about 12–16 shot glasses).
  6. Chill and Set: Carefully transfer the baking sheet with the filled shot glasses to the refrigerator. Chill for at least 4 hours, or until the jello is fully set and firm to the touch. For best results, let them set overnight.
  7. Serve and Enjoy: Once set, the jello shots are ready to serve. Garnish with a small raspberry, a mint leaf, or a tiny star-shaped sprinkle for a festive touch. Keep them chilled until ready to serve.

Notes

Bloom the gelatin properly for a smooth texture. Do not boil the champagne to preserve bubbles. Use a spouted measuring cup for easy pouring. The flavor improves after a day in the fridge. Store covered in the refrigerator for up to 3 days.
