These crispy baked Parmesan zucchini chips are a healthy, guilt-free snack that delivers all the crunch of a fried chip. With a simple technique and wholesome ingredients, you can enjoy a savory, cheesy treat that’s perfect for snacking or as a side dish.

Ingredients

Scale
  • 2 medium zucchini (about 810 ounces each)
  • 1 teaspoon kosher salt, plus more for sprinkling
  • 1/2 cup finely grated Parmesan cheese
  • 1/2 cup panko breadcrumbs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon freshly ground black pepper
  • Olive oil spray or cooking spray
  • Optional for serving: marinara sauce, ranch dressing, or lemon wedge

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and dry the zucchini. Trim off the ends, then slice into 1/4-inch thick rounds.
  3. Place the slices in a single layer on a paper towel-lined baking sheet. Sprinkle lightly with kosher salt on both sides. Let sit for 10 minutes.
  4. After 10 minutes, use a clean paper towel to gently press the zucchini slices and absorb all released moisture. They should feel dry to the touch.
  5. In a shallow bowl, combine the grated Parmesan, panko breadcrumbs, garlic powder, dried oregano, and black pepper. Mix well.
  6. Line a baking sheet with parchment paper and lightly spray with olive oil.
  7. Working with one slice at a time, press both sides of the zucchini into the coating mixture. Ensure each slice is evenly coated. Gently shake off any excess.
  8. Place the coated slices in a single layer on the prepared baking sheet, leaving space between each slice.
  9. Lightly spray the tops of the coated zucchini slices with olive oil spray.
  10. Bake for 12-15 minutes, until golden brown and crispy around the edges. If not using a wire rack, flip halfway through (at 6-7 minutes).
  11. Remove from oven and let cool on the baking sheet for 2-3 minutes. They will continue to crisp up as they cool.
  12. Serve immediately, warm, with your favorite dipping sauce or on their own.

Notes

Don’t skip the salting step—it draws out moisture and is essential for crispiness. Use a wire rack if possible for even air circulation. Avoid overcrowding the baking sheet. Let chips cool on the pan for a few minutes to maximize crunch. For best results, serve immediately.
