  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 375°F (190°C). Scrub yams, poke holes with a fork, and bake directly on the oven rack for 45-60 minutes until very soft.
  2. Once cool enough to handle, peel the skins off the yams and place the flesh in a large mixing bowl.
  3. Mash the yams with a potato masher until relatively smooth, breaking up large chunks.
  4. In a small saucepan over medium heat, melt the butter. Add brown sugar, cinnamon, nutmeg, and salt, whisking until dissolved and bubbly (2-3 minutes).
  5. Remove saucepan from heat and stir in heavy cream and vanilla extract.
  6. Pour mashed yams into a 9×13 inch baking dish and spread evenly.
  7. Pour the butter-sugar sauce over the yams and gently fold or swirl to combine.
