Ingredients

  • 4 ounces Brie or Camembert
  • 4 ounces aged Gouda or Manchego
  • 4 ounces blue cheese (like Gorgonzola or Roquefort)
  • 4 ounces prosciutto
  • 4 ounces salami (like Genoa or Soppressata)
  • 2 ounces capicola or coppa
  • 1/2 cup mixed olives
  • 1/4 cup cornichons or small pickles
  • 1/4 cup honey or fig jam
  • 1/4 cup roasted almonds or Marcona almonds
  • 1 small apple or pear, sliced
  • 1/2 cup dried apricots or figs
  • 1 small baguette or 4 ounces assorted crackers
  • Fresh rosemary or thyme sprigs (optional)
  • Edible flowers (optional)

Instructions

  1. Start with the cheeses (2 minutes). Take your cheeses out of the refrigerator about 15 minutes before you plan to serve. Place the Brie whole on the board. Slice the aged Gouda into thin triangles or small cubes. Crumble or slice the blue cheese into manageable pieces. Arrange them at different corners of the board, leaving space between each type.
  2. Add the meats (3 minutes). Fold the prosciutto slices into loose ribbons or roll them into small rosettes. Arrange them near one of the softer cheeses. Slice the salami into thin rounds and fan them out in a small cluster. Fold the capicola into loose bundles. Place the meats in different areas so guests can easily reach them from any angle.
  3. Place the small bowls (1 minute). Set your ramekins or small bowls on the board. Fill one with the olives, another with the honey or fig jam, and a third with the cornichons. Position them so they break up the larger areas of the board.
  4. Add the fruits and nuts (3 minutes). Scatter the sliced apple or pear around the board, tucking some pieces near the blue cheese. Place the dried apricots or figs in small clusters. Sprinkle the almonds in a few different spots rather than piling them all in one place.
  5. Fill in with bread and crackers (3 minutes). Slice the baguette into thin rounds and arrange them in a row or small stack. Fan out the crackers in another empty space. Fill most of the visible board surface.
  6. Garnish and serve (2 minutes). Tuck a few sprigs of fresh rosemary or thyme between the items for a pop of green. If you’re using edible flowers, place them delicately on top of the cheese or scattered around the board. Serve immediately.

Notes

Take cheeses out of the refrigerator 15-20 minutes before serving for best flavor. Don’t overcrowd the board; leave breathing room between items. Think about texture contrast with soft, hard, crunchy, chewy, and creamy elements. Cut items into bite-sized pieces. Serve at room temperature. Leftovers can be stored separately in airtight containers; cheeses should be wrapped in wax paper or cheese paper.
