  • ½ cup buttermilk, room temperature (or ½ cup milk + ½ tablespoon lemon juice, let sit 5 minutes)
  • 1 teaspoon vanilla extract
  • ½ cup granulated sugar (for coating)
  • 1 ½ teaspoons ground cinnamon (for coating)
  • ¼ cup unsalted butter, melted (for brushing)

Instructions

  1. Reduce the apple cider. Pour 1 cup apple cider into a small saucepan. Bring to a boil over medium-high heat, then reduce to a simmer. Let it cook for 12-15 minutes, stirring occasionally, until it reduces to about ½ cup. Set aside to cool for 5 minutes.
  2. Preheat your oven to 350°F. Grease your donut pan generously with butter or nonstick spray.
  3. Mix the dry ingredients. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves until evenly distributed.
  4. Mix the wet ingredients. In a medium bowl, whisk together the granulated sugar, brown sugar, and egg until smooth and slightly lighter in color, about 1 minute. Add the melted butter, buttermilk, vanilla extract, and the cooled reduced apple cider. Whisk until combined.
  5. Combine wet and dry. Pour the wet ingredients into the dry ingredients. Use a rubber spatula to fold together gently until no streaks of flour remain. The batter will be lumpy—do not overmix.
  6. Fill the donut pan. Transfer the batter to a piping bag or a zip-top bag with the corner snipped off. Pipe the batter into each donut cavity, filling about ¾ full.
  7. Bake for 10-12 minutes, or until the donuts spring back when lightly touched and the edges are golden brown. A toothpick inserted into the thickest part should come out clean or with a few moist crumbs. Let them cool in the pan for 2 minutes, then transfer to a cooling rack.
