  • 1/2 cup freshly squeezed lemon juice (about 34 medium lemons)

Instructions

  1. Cut about 4 cups of seedless watermelon into cubes, discarding any seeds if present.
  2. Place the watermelon cubes into a blender. Pulse a few times, then blend on high for about 1 minute until smooth and juicy.
  3. Pour the blended watermelon through a fine mesh strainer or cheesecloth into a large bowl or pitcher, pressing the pulp gently to extract as much juice as possible.
  4. Roll 3-4 medium lemons on the counter, cut in half, and juice until you have about 1/2 cup of fresh lemon juice. Strain to remove seeds.
  5. Add the fresh lemon juice and 1/4 cup of granulated sugar (or chosen sweetener) to the watermelon juice. Stir vigorously until the sugar dissolves. Adjust sweetness or tartness as needed, adding a pinch of salt if desired.
  6. Refrigerate the lemonade for at least 30 minutes before serving. Serve over ice with optional mint leaves or lemon slices.
