A vibrant and refreshing non-alcoholic mocktail combining tart hibiscus, warming ginger, and a zesty Tajin rim, perfect for summer gatherings.

Ingredients

Scale
  • 1 cup (15 grams) dried hibiscus flowers (Flor de Jamaica)
  • 1-inch piece fresh ginger root, peeled and thinly sliced
  • 6 cups (1.4 liters) water
  • 1/2 cup (100 grams) granulated sugar
  • Juice of 1 to 2 fresh limes
  • 2 tablespoons Tajin seasoning for rimming glasses
  • Ice cubes
  • Optional: fresh mint leaves or lime wedges for garnish

Instructions

  1. Bring 6 cups (1.4 liters) of water to a boil in a large pot.
  2. Remove from heat and add dried hibiscus flowers and sliced fresh ginger.
  3. Cover and steep for 15 minutes until the water turns deep red.
  4. Strain the liquid through a fine mesh strainer or cheesecloth into a heatproof bowl or pitcher, pressing gently to extract juices.
  5. While warm, stir in 1/2 cup (100 grams) granulated sugar until fully dissolved.
  6. Let the mixture cool to room temperature.
  7. Add juice from 1 to 2 fresh limes, starting with one and adjusting to taste.
  8. Rub a lime wedge along the rim of each glass, then dip rims into Tajin seasoning to coat.
  9. Fill glasses with ice cubes.
  10. Pour the Agua de Jamaica mocktail over the ice and garnish with fresh mint leaves or lime wedges if desired.

Notes

Do not over-steep hibiscus to avoid bitterness; 15 minutes is ideal. Use fresh ginger for best flavor. Rim glasses with Tajin just before serving to keep it crisp. Store hibiscus-ginger concentrate in the fridge up to 3 days and add lime juice and Tajin rim just before serving. For a sparkling version, replace half the water with sparkling water before serving.
