Ingredients

  • Cold water (for soaking radish slices)
  • Cured meats: Prosciutto (4 oz / 115 g), Soppressata (4 oz / 115 g), or your favorites
  • Cheeses: Aged Manchego (4 oz / 115 g), creamy Brie (4 oz / 115 g), herb goat cheese log (4 oz / 115 g)
  • Crunchy crackers or sliced baguette (1-2 baguettes or 1 box of crackers)
  • Marcona almonds (ยฝ cup / 60 g)
  • Fresh herbs like thyme or rosemary sprigs for garnish
  • Optional: Mixed olives (ยฝ cup / 75 g)

Instructions

  1. Prepare the Honey Whipped Ricotta: Place ricotta in a mixing bowl. Add honey, lemon zest, and kosher salt. Whip with an electric mixer on medium speed for 3-5 minutes until fluffy and smooth. Adjust sweetness if needed.
  2. Create Radish Roses: Trim radish tops and bottoms. Thinly slice radishes lengthwise with a sharp paring knife. Soak slices in cold water for 10 minutes to help curl. Drain and gently roll slices to form rose shapes, securing with toothpicks if needed.
  3. Arrange the Board: Lay out serving board or platter. Place small bowls or ramekins for honey whipped ricotta and olives. Dollop or spread whipped ricotta and nestle radish roses on or alongside.
  4. Place Cheeses and Meats: Slice Manchego and Brie into bite-sized pieces. Arrange cheese wedges and cured meats like prosciutto and soppressata in small piles or folds around the board.
  5. Add Crackers and Nuts: Fill gaps with crackers or baguette slices and scatter Marcona almonds. Add fresh herb sprigs for garnish.
  6. Final Touches: Add optional olives or pickles in small bowls. Adjust spacing so the board feels full but not crowded.

Notes

Whip ricotta cold for best texture. Slice radishes very thin for curling. Assemble board about 30 minutes before serving and keep at room temperature. Store whipped ricotta covered in fridge up to 3 days. Radish roses best fresh. Keep crackers separate until serving to avoid sogginess.
