  • 1 cup feta cheese, crumbled (preferably Greek feta like Dodoni or Athenos)
  • 1/4 cup fresh mint leaves, finely chopped
  • 2 tablespoons freshly squeezed lime juice
  • 1 tablespoon honey (raw or wildflower; can substitute maple syrup for vegan option)
  • 2 tablespoons extra virgin olive oil
  • Pinch of salt
  • Freshly ground black pepper, to taste (optional)

Instructions

  1. Cut about 4 cups of watermelon into roughly 1-inch cubes. Remove any seeds and transfer to a large mixing bowl. Keep watermelon chilled before cutting for best texture.
  2. In a small bowl, whisk together 2 tablespoons lime juice, 1 tablespoon honey, 2 tablespoons extra virgin olive oil, a pinch of salt, and freshly ground black pepper to taste until honey is fully dissolved and mixture is well combined.
  3. Pour the dressing over the watermelon cubes gently. Add 1 cup crumbled feta cheese and 1/4 cup finely chopped fresh mint leaves. Toss carefully with a large spoon or salad tongs to avoid breaking the watermelon.
  4. Allow the salad to sit at room temperature for 10-15 minutes to let flavors meld. Alternatively, chill in the fridge for up to 30 minutes but avoid longer to prevent watery texture.
  5. Taste and adjust seasoning if needed before serving. Serve immediately for freshest flavor.

Use ripe, seedless watermelon for best sweetness and texture. Whisk dressing thoroughly to blend honey and lime juice well. Toss salad gently to avoid breaking watermelon cubes. Prepare dressing ahead but add just before serving to keep salad crisp. For vegan version, substitute feta with firm tofu or vegan cheese and honey with maple syrup. Leftovers keep up to 24 hours refrigerated; drain excess liquid before serving again.
