  • 2 cups (240g) powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • Food coloring gels in red, yellow, blue, and green
  • 1 cup strawberries, hulled and sliced
  • 1 cup blueberries
  • 1 kiwi, peeled and thinly sliced
  • 1 cup raspberries
  • 1 small handful of blackberries (optional)
  • Fresh mint leaves for garnish

Instructions

  1. In a large bowl, whisk together flour, sugar, and salt. Cut in softened butter until mixture resembles coarse crumbs.
  2. Add egg and vanilla extract, mix until dough forms a ball. If too sticky, sprinkle a little extra flour.
  3. Flatten dough into a disk, wrap in plastic wrap, and refrigerate for at least 20 minutes.
  4. Preheat oven to 350°F (175°C). Line a 9-inch pizza pan with parchment paper or silicone mat.
  5. Roll dough into a 12-inch circle on a lightly floured surface. Transfer to pan, press evenly, and prick crust with a fork.
  6. Bake for 15-18 minutes until edges are golden brown. Cool completely on a wire rack.
  7. In a medium bowl, beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract, mixing well.
  8. Divide frosting into 4 bowls and add a drop or two of food coloring gels (red, yellow, blue, green) to each. Stir until vibrant.
  9. Spread each colored frosting in separate wedges or rings on the cooled crust, blending edges for a gradient effect.
  10. Arrange sliced strawberries, blueberries, kiwi, raspberries, and optional blackberries on top. Garnish with fresh mint leaves.
  11. Refrigerate assembled fruit pizza for at least 30 minutes to set frosting. Serve chilled or at room temperature.

Notes

Use room temperature butter and cream cheese for smooth frosting. Chill dough to prevent shrinking. Add fruit just before serving to avoid soggy crust. If frosting is too thick, add a teaspoon of milk to loosen. For dairy-free, use vegan cream cheese and plant-based butter. Gluten-free flour can be substituted for all-purpose flour.
