A quick and easy summer brunch recipe featuring a vibrant charcuterie board with mini waffles, fresh fruit, cheeses, and cured meats. Perfect for casual gatherings and warm weather.

Ingredients

  • Mini waffles (store-bought frozen like Eggo or homemade)
  • Mixed berries (strawberries, blueberries, raspberries)
  • Sliced melons (cantaloupe, honeydew)
  • Seedless grapes
  • Brie or Camembert cheese
  • Sharp cheddar or aged gouda cheese
  • Goat cheese log or flavored chèvre (optional)
  • Thinly sliced prosciutto or serrano ham
  • Salami slices (mild or spicy)
  • Smoked turkey or chorizo (optional)
  • Raw almonds or walnuts
  • Honey or fruit preserves
  • Fresh herbs like mint or basil
  • Olives or cornichons (optional)

Instructions

  1. Toast frozen mini waffles in a toaster or oven at 350°F (175°C) for 4-5 minutes until crisp and golden. If homemade, cook fresh in a mini waffle maker for 2-3 minutes each. Let cool slightly.
  2. Rinse all fresh fruit. Hull and quarter strawberries, slice melons into bite-sized wedges, and separate grapes from stems. Pat dry with a paper towel to avoid excess moisture.
  3. Cut cheeses into small wedges or slices for easy picking. Arrange softer cheeses like brie so guests can easily spread or pick.
  4. Fold or roll slices of prosciutto and salami for a pretty presentation. Place them in small clusters around the board.
  5. Fill small bowls with nuts, olives, and honey or preserves. Place these strategically to keep the board balanced and accessible.
  6. On your chosen board, start with cheese clusters spaced apart. Add charcuterie next, then tuck mini waffles and fruit around. Fill gaps with nuts and garnish with fresh herbs.
  7. Drizzle a little honey over the brie or serve it on the side. Add a few sprigs of mint or basil for fragrance and color.

Notes

Toast mini waffles just before serving to keep them crisp. Let cheese come to room temperature before slicing for better flavor. If the board looks sparse, add crackers or bread slices. Keep cold items chilled until serving. For gluten-free, use gluten-free mini waffles or crackers. Vegan variations can use plant-based cheeses and waffles.
