Ingredients

Scale
  • 2 ½ cups (300g) all-purpose flour, plus extra for dusting
  • 1 packet (2 ¼ tsp or 7g) active dry yeast
  • ¾ cup (180ml) buttermilk, warmed (or milk + 1 tbsp lemon juice as substitute)
  • 3 tbsp (42g) unsalted butter, melted (plus extra for brushing)
  • 2 tbsp (25g) granulated sugar
  • 1 tsp salt
  • 1 large egg, room temperature
  • For the Cinnamon Honey Butter:
  • ½ cup (113g) unsalted butter, softened
  • ¼ cup (85g) honey
  • 1 tsp ground cinnamon
  • Pinch of salt

Instructions

  1. Activate the yeast by combining warm buttermilk (around 110°F / 43°C) with sugar and yeast in a small bowl. Let sit for 5-10 minutes until foamy.
  2. In a large bowl, whisk together flour and salt. Add melted butter, egg, and yeast mixture. Stir until a sticky dough forms.
  3. Knead the dough on a floured surface for 8-10 minutes until smooth and elastic, or knead with a stand mixer dough hook on medium speed for 6-7 minutes.
  4. Lightly oil a bowl, place dough inside, cover with plastic wrap or damp towel, and let rise in a warm spot for 1 to 1 ½ hours until doubled in size.
  5. Punch down dough and divide into 8-10 equal pieces (about 2.5 oz each). Shape each into a smooth ball and place in a greased loaf pan or baking sheet.
  6. Cover shaped rolls and let rise again for 30-40 minutes until puffed and nearly doubled.
  7. Preheat oven to 350°F (175°C). Bake rolls for 18-22 minutes until golden brown and hollow sounding when tapped. Tent with foil if browning too quickly.
  8. While rolls bake, mix softened butter, honey, cinnamon, and pinch of salt until smooth and creamy for cinnamon honey butter.
  9. Brush baked rolls generously with melted butter and serve warm with cinnamon honey butter spread on top.

Notes

Use warm buttermilk to activate yeast without killing it. Kneading develops gluten for fluffy texture. Let dough rise twice for best results. Brush rolls with melted butter immediately after baking to keep moist. Dough can be prepared ahead and refrigerated after first rise.
