Bright, colorful tropical fruit skewers paired with a smooth, creamy coconut dip make a perfect, refreshing summer snack that’s quick and easy to prepare.

  • Fresh pineapple, peeled and cut into bite-sized chunks
  • Ripe mango, peeled and cubed
  • Kiwi, peeled and sliced into rounds or halves
  • Strawberries, hulled and halved
  • Banana, sliced into thick rounds (optional, add just before serving)
  • Wooden skewers, soaked in water for 30 minutes
  • 1 cup full-fat canned coconut milk (shake well before opening)
  • ⅓ cup Greek yogurt (or dairy-free coconut yogurt for vegan option)
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh lime juice
  • Pinch of salt

Instructions

  1. Prep the Fruit (15 minutes): Peel and chop pineapple into roughly 1-inch chunks. Peel and cube mango into similar sizes. Slice kiwis into rounds or halves. Hull and halve strawberries. Slice bananas into thick rounds if using, keep separate and add just before serving.
  2. Make the Coconut Dip (5 minutes): In a medium bowl, combine 1 cup well-shaken full-fat coconut milk, ⅓ cup Greek yogurt, 2 tablespoons honey or maple syrup, 1 teaspoon vanilla extract, 1 tablespoon fresh lime juice, and a pinch of salt. Whisk until smooth and creamy. Adjust sweetness or lime juice to taste.
  3. Thread the Skewers (10 minutes): Take soaked wooden skewers and thread fruit pieces in colorful patterns—pineapple, mango, kiwi, strawberry, repeat. Leave space at ends for handling and avoid packing fruit too tightly.
  4. Chill and Serve: Place finished skewers on a platter and refrigerate for 10 to 15 minutes if desired. Serve chilled alongside the creamy coconut dip. For picnics, pack dip separately in a container with a lid.

Notes

Soak wooden skewers for 30 minutes to prevent burning if grilling. Add banana slices just before serving to avoid browning. Chill coconut milk beforehand for creamier dip. Optionally grill pineapple and mango for 2 minutes per side for smoky flavor. Dip can be made a day ahead to enhance flavors. Use plant-based yogurt to make dip vegan and dairy-free.
