  • 4 cups chopped fresh or frozen rhubarb (about 500g or 1 lb 2 oz)
  • 1 cup granulated sugar (200g)
  • 1 box yellow cake mix (15.25 oz or 432g), recommended Duncan Hines
  • 1 cup packed light brown sugar (220g)
  • 1 cup (2 sticks or 227g) unsalted butter, sliced thinly and cold
  • 1 teaspoon vanilla extract (optional)
  • Optional add-ins: ½ cup chopped walnuts or pecans, ½ teaspoon cinnamon, 1 cup fresh or frozen berries (strawberries or blueberries)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Chop about 4 cups (500g) of fresh rhubarb into roughly ½-inch pieces. If using frozen, thaw completely and pat dry with paper towels.
  3. In a large bowl, combine the rhubarb with 1 cup (200g) granulated sugar and 1 teaspoon vanilla extract (if using). Stir gently to coat all pieces and let sit for 5 minutes.
  4. Spread the rhubarb mixture evenly in the bottom of a 9×13 inch baking dish.
  5. Sprinkle the dry cake mix evenly over the rhubarb layer without mixing.
  6. Evenly spoon 1 cup (220g) light brown sugar over the cake mix.
  7. Dot the top with cold butter slices, spacing them evenly over the brown sugar layer.
  8. Bake uncovered for 45 to 50 minutes until bubbly and golden brown with caramelized edges.
  9. Check doneness by inserting a toothpick near the center; it should come out mostly clean with a few moist crumbs.
  10. Cool for at least 15 minutes before serving to let the filling thicken.
