  • 46 bone-in, skin-on chicken thighs (about 1.5 to 2 pounds / 700900 grams)
  • Salt and pepper, to taste
  • 4 cloves garlic, minced
  • 3 tablespoons honey
  • 3 tablespoons unsalted butter, cut into small pieces
  • 2 tablespoons olive oil
  • 1 teaspoon apple cider vinegar
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Remove the chicken thighs from the fridge and pat them very dry with paper towels. Season both sides generously with salt and pepper.
  2. Place a heavy skillet or cast iron pan over medium-high heat. Add olive oil and let it shimmer but not smoke.
  3. Place the chicken thighs skin-side down in the pan. Press lightly to ensure even contact. Cook without moving until the skin is golden brown and crispy, about 8-10 minutes.
  4. Flip the chicken and cook the other side until cooked through and juices run clear, about 5-7 minutes. Internal temperature should reach 165Β°F (74Β°C). Cover with a lid if thighs are thick.
  5. Lower heat to medium-low. Push chicken to one side of the pan. Add minced garlic to the empty side and sautΓ© until fragrant, about 30 seconds.
  6. Stir in honey, then add butter pieces. As butter melts, tilt the pan and spoon the sauce over the chicken repeatedly to coat with glaze.
  7. Once sauce thickens slightly and coats the chicken, remove from heat. Sprinkle with chopped parsley before serving.

Notes

Pat chicken dry before cooking to ensure crispy skin. Cook in batches if pan is crowded. Let chicken rest a few minutes before serving. For thicker thighs, finish in a 400Β°F oven for 10-12 minutes after searing. Butter added last prevents burning and adds richness.
