A rich and comforting one-pan chicken dish with a creamy sun-dried tomato sauce that’s quick and easy to prepare, perfect for busy weeknights or cozy dinners.

  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 680 g), pounded to even thickness
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1/3 cup chopped sun-dried tomatoes (packed in oil)
  • 1 cup low sodium chicken broth (240 ml)
  • 3/4 cup heavy cream (180 ml)
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning (or mix of dried basil, oregano, and thyme)
  • A handful fresh basil, chopped (optional)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Pound the chicken breasts to about 1/2 inch thickness for even cooking. Season both sides generously with salt, pepper, and Italian seasoning. (5 minutes)
  2. Heat olive oil in a large skillet over medium-high heat. When shimmering, add chicken breasts and sear for 5 minutes on each side until golden brown and cooked through. Remove chicken to a plate and tent with foil to keep warm. (12 minutes)
  3. Lower heat to medium and add minced garlic to the pan. Stir quickly for about 30 seconds until fragrant but not burnt. (30 seconds)
  4. Add chopped sun-dried tomatoes and cook for 1-2 minutes to release their flavor into the oil. (2 minutes)
  5. Pour in chicken broth and use a wooden spoon to scrape up any browned bits from the bottom of the pan. Let it simmer for 3-4 minutes to reduce slightly. (4 minutes)
  6. Stir in the heavy cream and grated Parmesan cheese until the sauce is smooth and creamy. Simmer gently for another 3-5 minutes until thickened to your liking. (5 minutes)
  7. Return chicken to the pan, spoon sauce over the top, and cook for a further 2-3 minutes to reheat and let flavors meld. Taste and adjust salt and pepper if needed. (3 minutes)
  8. Finish with fresh chopped basil scattered over the dish just before serving for a pop of color and freshness. (1 minute)

Notes

If sauce gets too thick, add a splash more chicken broth or cream to loosen it. Avoid overcrowding the pan to ensure proper searing. Use medium-high heat for searing to lock in juices. Garlic burns quickly, so add after chicken is removed and stir just until fragrant. Rest chicken tented with foil to keep warm and juicy. For dairy-free version, substitute heavy cream with coconut cream and Parmesan with nutritional yeast or dairy-free cheese.
