  • ½ cup (115 g) unsalted butter, softened
  • 3 cups (360 g) powdered sugar, sifted
  • 1 tsp vanilla extract
  • Natural green food coloring (optional), a few drops
  • About 2 tbsp edible constellation sprinkles

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
  2. In a medium bowl, whisk together sifted flour, baking powder, baking soda, salt, ground cinnamon, and spinach or matcha powder. Set aside.
  3. Using an electric mixer, beat softened butter and granulated sugar on medium speed until light and fluffy, about 3-4 minutes.
  4. Beat in eggs one at a time, then add vanilla extract, scraping down the bowl sides occasionally.
  5. Alternately add dry ingredients and buttermilk in three parts, starting and ending with dry ingredients. Mix on low speed just until combined, about 2-3 minutes total.
  6. Spoon batter evenly into liners, filling about two-thirds full (use an ice cream scoop for even portions).
  7. Bake for 18-22 minutes, checking doneness with a toothpick inserted in the center; it should come out clean or with a few moist crumbs.
  8. Cool cupcakes in the tin for 5 minutes, then transfer to a wire rack to cool completely.
  9. For frosting, beat softened cream cheese and butter until smooth, about 3-4 minutes.
  10. Gradually add powdered sugar on low speed to avoid dust clouds, then increase speed until fluffy.
  11. Stir in vanilla extract and optional green food coloring for a vibrant hue.
  12. Once cupcakes are fully cooled, pipe or spread frosting on top and sprinkle with constellation decorations.

Notes

Use almond flour for gluten-free version; swap eggs with flax eggs and cream cheese with plant-based alternative for vegan version.
